My definition of local cuisine is the dishes that people cook in their home towns, based on local products which they have at their fingertips and bourne out of their way of thinking and their customs. Greek cuisine is not only moussaka and souvlaki. Times are changing and in Greece, thankfully, something is cooking.... We need to build new traditions for the next generations.
